This permit-to-install (PTI) is for a proposed new cracker line that will produce yeast-leavened goldfish crackers. Cracker Line #9 (P012) is the proposed new source. The Four Silos and Roadways will not undergo any physical changes, but will experience increased use to due an increase in cracker production requiring more ingredients to be delivered and stored as well as increased shipping going out of the facility.

8. Emission Control Technology
Oven
Use of a catalytic oxidizer to control VOC emissions. The catalytic oxidizer must have an overall VOC control efficiency (including capture and destruction efficiencies) of 95% or a VOC outlet concentration of 10 ppmv from the natural gas-fired oven on a 3-hr average
Proofing and Mixing
Minimize emissions during proofing by covering dough troughs with plastic
Develop and implement a Sanitation Standard Operating Procedures (SSOP) which outlines the required cleaning operations and cleaning schedule for the mixing and proofing equipment and area, based on Food and Drug Administration (FDS) requirements. The plan shall include, but not be limited to, requirements for the removal of excess dough, product and oils from equipment and requirements for washing the equipment and area floors
